You cannot smell a truffle. Nina can, through a hand's depth of wet Piedmont clay, and the whole game is learning to read her. Scent here is a real simulated field: it leaves the ground, drifts downwind, pools in the hollows and fades. You never see it. You see her — head up quartering the air, the sudden check, the tail doubling, the loose circle that means nothing is down there, and the freeze that means go. Work her into the wind, cut the plug slowly, fill every hole. The ground remembers what you did to it, across three autumns.
